Who has a guilty pleasure with chocolate? Who is need of more energy? What if I could tell you chocolate is healthy for you? I mean in moderation of course. What I if could tell you I have the perfect recipe that contains ingredients that are not only healthy and packed with energy, but taste yummy and includes chocolate. I would say , count me in! I have tried several recipes and I have finally developed one that I love! The energy bites help to satisfy my sweet tooth and give me energy. Now, I don’t mean you can eat all of them in one sitting. I mean you totally could because they are that good!:) I allow myself to 2 a day. Moms I also will let you in on a little secret…
These are perfect for breastfeeding. Just add brewers yeast into the recipe below. I know when I was breastfeeding I got so many crazy cravings. Am I right moms? I never had the cravings for vegetables or food that was “good” for me. I got the cravings for greasy, fried food and sweets. It was terrible! But, I learned and I found these little bite sized gems to help with my cravings and help boost my supply. These are also great for moms on the go to snack while at work or at home. For me, I can barely finish my coffee during the morning and by the time I get to it , its ice cold and has that coffee ring stained on the inside. You moms know what I am talking about. I mean forget eating!
Between a toddler and an infant I barely can manage to put a bra on:) Don’t worry I put clean underwear on;) Being a mom is tough. Sitting down for breakfast is definitely not on the daily agenda most days. So I have found different ways of trying to find healthy food/snack items to make sure I am eating and keeping my metabolism and energy up. It is very important to maintain a healthy meal plan. Eating one or two large meals a day is not ideal ( I get it, some days are and will be like that) but try to eat small portions multiple times a day. We need all the energy we can get!
This recipe uses simple ingredients ( most have the items in their pantry) and takes less than 15 minutes to make.

Ingredients
Rolled Oats ( I use uncooked Quaker Oats)
Ground Flax Seed
Coconut Oil ( I use the Target brand- Simply Balanced- Organic Refined Coconut Oil)
Peanut Butter ( I like to use the Dark Chocolate Almond Butter from Simply Balanced line from Target– have fun with it)
Raw Honey ( I like to use the Organic Raw Wildflower Honey from Simply Balanced Line from Target)
Vanilla Extract ( optional- but I like this to add a bit of flavor)
Dark Chocolate Chips ( try to find the higher Cacao possible- the brand pictured is 63% Cacao)
Recipe
2 cups rolled oats
1 cup of peanut butter (I use almond butter and sometimes use the dark chocolate almond butter if I am feeling adventurous:))
1/2 cup organic flaxseed
1/2 cup raw honey
2 Tbs of coconut oil
1 Tbs vanilla extract, pure (optional)
1/2 cup of dark chocolate chips, 63% cacao or higher
As I mentioned above, these are also great for nursing moms! Just add 1/2 cup of Brewers yeast ( make sure it’s not active yeast, very different) . I made these to help boost my milk supply and to have for my snacking addictions!
Combine the non-dry ingredients first – Peanut Butter, Honey and Coconut Oil. Blend well with spatula/spoon. I also added in Vanilla Extract
Add in Oats and Flax Seed. Mix well
Now the fun part. Add in the dark chocolate chips! Fold in and mix
Form into bite size balls ( about the size of a golf ball) and line on wax paper. Dough will be sticky. That is totally OK. Once you put in the fridge they will set.
Store in air tight container. Place in fridge for 60 minutes to set. I actually leave them in the fridge as I like them a little colder. They can be stored in the fridge for up to 2 weeks or in freezer for up to 2 months.
I line each layer with wax paper so they don’t stick together during the setting phase.
Now you have a on-the-go snack that you can easily grab from the fridge. WARNING: they are addicting so try to limit yourself to just two. My kids love them too! Great for snacks!
